Bacon Avocado Deviled Eggs
Food changes when you become a wife and a mom or either. Or, at least, the things we eat and don’t eat change. No, I am not talking about trying to lose baby weight or gaining weight because we are now happily married. I am talking about the dictators and food hogs we live with. Before you write this Mama off as crazy let me give you a couple examples and if you stick around a great recipe for Bacon Avocado Deviled Eggs.
I love Special K cereal, it is this Mama’s indulgence (this and Dr. Pepper). I no longer buy Special K. Why? Because, the last 3 boxes I bought I never got one stinking bowl of. Tucker demolished each box in less than a day. (Kelloggs if you read this you may be missing a marketing segment, sure women love Special K, but apparently so do teen boys!)
There are also the foods I love and no one else in this house will touch with a 10 foot pole. When I met my Hubby he wouldn’t eat any seafood, none, if it lived in water he wouldn’t touch it. I LOVE seafood, enough that we have slowly worked on this (and have made major progress). That wasn’t the only thing he hated that I happen to like; he hates eggs, eggplant, anything really spicy, mushrooms, onions, sweet potatoes… This is actually the abridged list. Some things I make anyhow, because one or both of the kids like them. Some dishes, are just gone.
One dish that I love, and no one else in this house does, that I have given up making is Deviled Eggs. They won’t eat them. And, while they are a summer and BBQ fav for me, they aren’t worth the effort for me alone to eat. Sure, I get lucky and go somewhere for a cookout and stumble upon a good deviled egg now and then, but not often enough darn it! Well, Spring is here and Easter (with all those hard-boiled eggs for dying) is here and this Mama wanted some Deviled Eggs!
And this time Mama was going to get what she wanted, and the whole darn family was gonna like it!! So I wandered Google and Pinterest and after some recipe tinkering created a Deviled Eggs recipe I was certain would be acceptable to my picky eaters. What follows is a Deviled Eggs recipe so good, every member of my house ate them and liked it! (except the cats, we didn’t give the cats any)
- 12 eggs, hard boiled and shelled
- 1 lime
- 1 avocado
- 3-5 sprigs fresh cilantro
- 1/2 cup Miracle Whip (or Mayo if that’s your family’s preference)
- 1 tbsp mustard
- 1 tbsp wasabi mustard (if you would prefer to not ad the spice of wasabi, use 2 tbsp mustard)
- 4 slices bacon, cooked crisp
- Cracked black pepper to taste
- Sea salt to taste
Halve eggs, remove yolks, an either reserve for another recipe or discard (we rationed ours out as treats for our beagle) and place halved egg whites on plate or tray,
Peal and dice the avocado and add to a mixing bowl
Add the from the lime to the avocado
Chop the cilantro and add to the mixing bowl
Rough chop and crumble the bacon and add to the bowl
Add the remaining ingredients combine until smooth and fully combined
Spoon bacon avocado mix into eggs, chill, covered, until ready to serve
This filling is not as firm as standard Deviled Eggs, because I omitted the egg yolk. I left the egg yolk out to persuade my family to give this recipe a try. You don’t have to. But, this recipe was a huge hit, everyone loved them, including Bacon Beer Hubby who has been known to pick egg out of potato salad. Since the beagle was more than content to have egg yolks as treats, it was a win for everyone in this household. I truly cannot wit to break these babies out the next time we have people over for a BBQ, though for once I will have to make tons, because my own family will actually eat them!!!!
