Bacon Toffee Pecan Cookies

I may be a great cook, but I am a notoriously bad baker. I have reached a point that I bake for the holidays and that is about it (and those tried and true family recipes only go right for me about half the time). However, Harper loves to bake and I have been trying out new recipes, both for the blog and as a fun thing to do in the kitchen with her, plus who doesn’t love having something sweet around? After consulting with our pantry and my assistant baker, Harper, we decided to add bacon, toffee, and pecans to our cookies. And, so, our AMAZING Bacon Toffee Pecan Cookies were created!

Bacon Toffee Pecan Cookies

Print Recipe
Serves: 4-8 Cooking Time: 10 to 12 minutes


  • 1 cup Margarine
  • 3/4 cup granulated sugar
  • 3/4 cup firmly packed light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp. vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp. baking powder
  • 3/4 tsp. salt
  • 1/4 tsp. baking soda
  • 1/2 cup chopped pecans
  • 1/2 cup chopped toffee pieces
  • 1/2 cup finely chopped crisp bacon



Preheat oven to 375 degrees F.


Mix margarine, granulated sugar, light brown sugar, egg, egg yolk and vanilla in large bowl until well mixed.


Stir in flour, baking powder, salt and baking soda until blended. (Dough will be soft and creamy.)


One at a time add pecans, toffee, and bacon until well mixed.


Drop dough by rounded tablespoonfuls on to an ungreased baking sheets 3-inches apart.


Bake 10 to 12 minutes until edges are lightly golden.


Cool 1 minute on wire rack; remove from sheets and cool completely.

It should come as no surprise we used bacon in our cookies, but that salty-bacon-y goodness works great in sweet dishes too. I have always been a sucker for toffee and pecans. This recipe is now a family favorite, sometimes I substitute chocolate chips for the toffee, and every once in a blue moon I go nuts and just add the chocolate chips in too, for the ultimate cookie experience. Whether you go with our Original Bacon Toffee Pecan Cookies or you add a little chocolate or something else you love into the mix this recipe is bound to be a winner!
