Bacon Guacamole Grilled Cheese
As amazing as Bacon Guacamole Grilled Cheese sounded when Bacon Beer Hubby suggested we try it I was uncertain about trying, because I didn’t see the kids liking it, even a little bit. But, my sweet Hubby has been the best for trying recipe after recipe I have concocted, so it was time I tried one of his suggestions (don’t judge me for being skeptical Bacon Beer Hubby made spaghetti once and it was so bad I couldn’t even pretend to choke it down, and this was during our early dating years when you’re on your best behavior). The first time I made this recipe we made our own guacamole and I played it safe and made regular grilled cheese and a stack of Bacon Guacamole Grilled Cheese.
There was no reason to be so worried, or make extra plain sandwiches because the kids actually loved the Bacon Guacamole blend. That’s right my Hubby was right. We prefer to make our own guacamole, but you can just as easily use store bought guacamole if you would like. We have made this grilled cheese sandwich several times now, sometimes we add onions or tomatoes, Tucker loves his with salsa, making this sandwich incredibly tasty and versatile!
Bacon Guacamole Grilled CheesePrint Recipe
- Sliced Italian Bread (2 per sandwich)
- 2-3 slices bacon per sandwich
- 2 TBSP Guacamole per sandwich
- 2 slices sharp cheddar per sandwich
- Butter for bread
Butter the bread and cook the bacon to your desired crispness.
Spread the guacamole on one slice of bread. Place the cheese on the other
Place the bread, butter side down in an already hot frying pan. As the cheese melts place the bacon on top of the guacamole and carefully put the cheese-y bread on to the bacon/gauc piece. Slightly compress with you spatula. Flip and allow to cook until bread is golden brown.
Serve and enjoy!
Variations: 1. Add 2 slices tomato 2. Sub in crumbled queso fresca and shredded cheddar 3. Use a cheese- infused bread and Add tomato and sliced jalapeno 4. Add leftover taco or fajita meat for a filling and delicious lunch!
Grilled cheese sandwiches are so popular because they are one of those ultimate comfort foods. I think another reason we, and many many others, love them so is there is a never ending list of variations. Tossing bacon into the mix started because my kids are not huge fans of grilled cheese the old fashioned way. But, once we started we just kept coming up with different cheesy melt-y bacon-y sandwiches of happiness.
