Sweet Pepper Bacon Bombs
There is something to be said about a good stuffed pepper. Peppers make the perfect vessel for stuffing with just about anything you can think of. The first meal I ever made Bacon Beer Daddy was my Chicken and Cheese Stuffed Poblano Peppers (after that meal I knew he was all mine). I have always bring fresh peppers when we go camping, because I always come up with a tasty way to stuff and grill them. My Sweet Pepper Bacon Bombs are great for a game day party, camping, grilling, heck just about anytime. These peppers are easy to make, taste great, and are the perfect finger food size!
Sweet Pepper Bacon BombsPrint Recipe
- 1 lb bag mini sweet peppers
- 8 oz cream cheese ( one block)
- 1/2 cup shredded cheddar
- 1 tomato
- 1/2 red onion
- 1 lb thin sliced bacon
- 1/4 cup BBQ sauce
- 1/4 cup maple syrup
- 3 TBSP Hot sauce
Preheat oven to 350 F place a baking rack in a large cake pan or on a cookie sheet
Dice tomato and onion.
Soften cream cheese and stir in the shredded cheddar, onion and tomato. Mix and set aside.
Cut peppers in half lengthwise
Mix BBQ sauce, hot sauce, and maple syrup together in a bowl.
With a spoon fill each half of a pepper, careful not to overstuff.
Stick the pepper back together and coat a slice of bacon in the sauce mix and wrap around the pepper, securing with a toothpick.
Place pepper on baking rack. Continue stuffing and wrapping until all peppers are done.
Place in the oven bake until bacon is fully cooked.
Remove toothpicks, serve and enjoy!
You might notice in my picture I did not use toothpicks. I am a tad bit bullheaded and was certain I could get the bacon to stick. Don’t be me, make life easier and just use the toothpicks. I love to serve these Sweet Pepper Bacon Bombs with ranch to dip or warm queso cheese. However you prefer to serve them I promise they are bound to garner rave reviews!
