Daddy’s Favorite Bacon Caramel Popcorn

We make caramel corn for the holidays, as well as popcorn balls. While the whole family loves caramel corn, I have to admit we don’t make it very often outside of the holiday season. During a recipe brainstorming session (aka drinking a few beers while watching food network with Bacon Beer Hubby) we started bandying about a few bacon kissed sweet treat ideas. (Some of my best recipe ideas came after a few drinks and a couple hours of cooking shows.) Bacon Caramel Popcorn was one of the ideas we tossed around.

A few days later, while the hubby was at work, Tucker, Harper, and I set to working on the perfect Bacon Caramel Popcorn Recipe. It’s a really hard life my children lead, helping to perfect and taste all these bacon-centric recipes. Actually the kids love it, and they were ecstatic to work on this recipe while their Daddy was at work for the night. We took our family recipe for Caramel Corn and with some tweaks bacon-ized the recipe. Caramel Corn is good. Bacon Caramel Corn is out of this world!

Daddy's Favorite Bacon Caramel Popcorn with Pecans

Serves: 8 Cooking Time: 90 minutes

Ingredients

  • 8 pieces of bacon-uncooked
  • 1 1/2 cups popcorn kernels
  • 1 cup butter
  • 1 tbsp oil
  • 2 cups brown sugar
  • 1/2 cup light corn syrup
  • 1 cup pecans, rough chopped
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1 tsp salt

Instructions

Cook your bacon until it is nice and crispy.

Preheat your oven to 250 degrees F.

Place a large pot on the stove. Add the vegetable oil and the rendered bacon fat to the pot. Turn on medium heat.

Add the popcorn kernels to the pot. Cover and allow to cook, shaking occasionally until the first piece pops.

Remove from the heat for 1 minute, shaking the popcorn so that it starts to cook evenly.

Return to heat and cook, shaking occasionally, until it is all cooked, be careful not to burn your popcorn.

Once your popcorn is cooked dump it into a large roasting pan. I used a nonstick one, if yours is not nonstick you may want to grease the pan a bit.

Add the pecans to the popcorn.

Chop up the bacon and add it as well.

Place a medium pot on the stove and set to medium heat, and the butter and allow to melt.

Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly.

Once the sugar has completely blended boil, without stirring, 4 minutes.

Remove from heat and immediately stir in the baking soda and vanilla. The mixture will foam so be careful.

Pour over the popcorn, bacon, pecan mixture in your roasting pan. Stir/turn with a rubber spatula until the caramel coats the popcorn and everything is well mixed.

Place the roasting pan in the preheated oven and cook for 45 minutes. Stir/turn the popcorn every 15 minutes.

Remove from the oven and allow to cool before everyone jumps on it to enjoy!

Batch 1 of this cooled for about 3 minutes before my kids were standing there with bowls demanding they be filled with caramel corn! I gave the kids and myself a ration, and put the rest in an airtight container to be enjoyed over the next couple days. This recipe is easy, we have made it several times with no issues. It is absolutely the best caramel corn we have ever made, and it will be a family fav for years to come. I cannot wait to make a batch to take camping and to the drive-in this summer!
