Beer, Bacon, Cheese: these are words of love, foods of happiness. Combine the three and you get a Beer Cheese Dip that will please any crowd; perfect for game day, a party, or just a movie night snack.
I have a secret y’all, a desire I cannot deny, for years I have been lusting after the beer cheese dip at a local restaurant. They serve it with deep fried pretzels and it is so, so, so good. But, we don’t go out to dinner often, and when we do usually the choice is driven by the kids, convenience or a special occasion. Making a sports bar with wings and amazingly good beer cheese dip an unlikely choice for dinner out.
I waited too long to tackle making my own version of this dip. Given this Mama’s infatuation with bacon you know I had to incorporate some into my version of Beer Cheese Dip. We made this recipe 3 times this week, not because we were working out issues, but because it was so darned good, y’all it is better than the original! Without further ado I give to you Mama’s Bacon Beer Cheese Dip:
Mama's Bacon Beer Cheese DipPrint Recipe
- 1 bottle dark beer of your choice (think stout or porter)
- 3/4 pound velveeta or other type easy melt cheese (cubed)
- 1/2 cup shredded mozzarella
- 1/2 cup asiago cheese
- 2/3 cup chopped green onions
- 8 slices of crisp bacon (chopped), reserve the rendered bacon fat
Separate out 1/4 of the onions, 1/4 of the bacon, 1/4 of the asiago.
Preheat the oven to 400 degrees F.
In a large microwavable bowl add the reserved bacon fat, the beer, the cheeses, bacon, and onions. Stir together and place in the microwave for 2 minutes. Stir and microwave again one minute at a time until everything is melted and blends smoothly.
Pour the dip mix into a oven safe dish to with the reserved cheese, bacon, and green onion. Place in oven for about 15 minutes or until the top is browned and bubbling.
Serve and enjoy with pretzels, chips, bread, toast, or any other dip-able you love.
This dip is so darned good. And, of course I had to make myself some fried soft pretzels to go with them. Have you ever had soft pretzels deep fried? Try it, they are phenomenal. We made this dip for my Hubby and I to enjoy one late Saturday while we watched movies. Tucker was awake so we had to share the delicious (he sniffed out food in seconds, because he is a teen and that’s what they do). The next time we made it to take to a friend’s and it was gone in the first half hour. This dip is a hit and better than the Beer Cheese Dip that I had secretly lusted over for so long, but then like I say everything is better with bacon!
